Tiramisu
I still remember the time when I first went to the grocery store with my aunt to grab a dessert for the sleep over we were having that day. I still recall that I was having such a hard time making my decision on what I wanted. Till I came up to a dessert that I had never seen before, going to my aunt I asked about what it was and she did explain but not having tasted it before she was having a hard time. Finally she just said to get it and that we will split it when we get home. That night we split it in half and set down it hesitantly took one bite to see the flavor and it was past my expectations. I loved the moisture it had and the coffee flavor that came with it, yet is was not to strong so it complimented the dessert very nicely. I distinctly remember that while sitting beside me my aunt was just shaking her head up and down like she was saying " I told you so" as I was chowing down on my own Tiramisu.
Mouse Ingredients: 1 lb. 12oz. natural mousse mix 1 Tbsp espresso syrup 1/4 cup creme anglaise 1 lb. milk 1lb. 8oz. euro whipped topping 2 containers mascarpone cheese 2-3 packages of ladyfingers ( not for the mousse ) Espresso Ingredients: 2 cups hot coffee 2 Tbsp espresso powder 1/4 cup espresso syrup |

How to make the mousse:
step 1: I n a 20 qt mixer ( or split in half for two batches for an at home mixer ) put your milk, euro whipped topping, espresso syrup, creme anglaise. then also add in the mousse mix and whisk in too.
step 2: Place the mixing bowl in mixer and put on a whisk attachment and start off on the # 2 speed ( or half way/ speed) for 1 minute. Then scrape the bowl down well.
Step 3: then # 3 speed ( as high as it can go ) for 2 minutes. scrape then add all of your cheese in and put it on for one more minute.

How to make espresso syrup:
Step 1: add all of your coffee, espresso powder, and espresso syrup in a container and combine.
How to put Tiramisu together:
step 1: Have your lady fingers on the side, your bowl of espresso syrup, and the mousse in a piping bag. ( no tip is needed just cut to half an inch. )
step 2: Get an empty clean cup and fill it with a little blob of the mousse.
step 3: Cut two ladyfingers i half and dip them in the espresso syrup ( make sure they drain out well). place two halfs in the cup on top of the mousse and push down slightly.
step 4; Pipe in a little mouse on top of the lady fingers then repeat step 3. then pipe along the whole top of the cup.
step 5: Take a paring knife ( or any scraper tool ) and bit by bit scrape off the excess mousse, leaving some at the top to cover the lady finger but sits flat to the top of the cup.
Makes around 18 ( if using a tea cup )
